Break two eggs in a bowl. Make sure the eggs are at room temperature. Refrigerated eggs can lead to a hard, overcooked tortilla. Beate eggs with a fork or a whip. You want to break the egg yolks until there are no chains or balloons. The mixture should be slightly foamy. If you like, you can add a pinch of salt and pepper at this point.
Think of adding a few small pieces of cold butter to beaten eggs. This will lead to a richer omelet richer.
For a light and foamy omelet, add a little water to the egg mixture. The heating of the water vapor drives the eggs are peeled when they are cooked

Pour the egg mixture into the frying pan. Shake and tilt the pan for the egg mixture to cover the bottom. Continue to spread around the egg with a spatula. At the top of the omelette begins to take, run the spatula on the edges of the tortilla. Lift slightly to allow the uncooked egg to flow under the tortilla.
Add the cheese just before the end of the tortilla. When the tortilla is still liquid and liquid on top, sprinkle the cheese in the middle of it. The tortillas continue to cook after folding in half. If you wait until the tortilla is cooked, the result will be a very dry tortilla.
Think of adding other ingredients, as well as slices of mushrooms, herbs or pork shanks. Be sure to add the ingredients are already cooked (except cheese and herbs). For more ideas, see the section in this article on adding variations to their tortilla.
